Healthy Breakfast Muffins

Makes: 18 muffins

Ingredients:

Dry Ingredients:

Self-rising flour – 2 cups

Whole meal flour – ½ cup

Almond meal – ½ cup

Sugar – ½ cup

Coconut – ½ cup (grated)

Cinnamon powder – 1 teaspoon

Baking powder – 1 teaspoon

Wet Ingredients:

Eggs – 3

Orange juice – 1 ½ cups

Other Ingredients:

Green apple – 1

Blueberries – 200 gms

Carrot – 1 (Grated)

Method:

  1. Combine all dry ingredients in a big bowl.
  2. Make a well in the middle and add the eggs, start combining from the center without lumps.
  3. Add orange juice in parts and combine well without lumps.
  4. Add chopped green apples, blueberries and grated carrots, mix well.
  5. Pre heat oven to 180 ⁰ C.
  6. Pour the batter onto nonstick muffin trays and bake for 15 minutes.
  7. Muffins are done when inserted skewer comes out clean.
