Honey Choc-chip muffins (No butter, no sugar preparation)


Ingredients:

Dry ingredients:

Whole meal flour – 1 cup

Baking powder – 1 ¼ teaspoon

Almond meal – ¼ cup

Salt – a pinch

Desiccated coconut – ¼ cup

Dark Chocolate chips – ¼ cup

Wet Ingredients:

Honey – ¼ cup

Milk – ½ cup

Egg – 1

Rice bran oil – ½ cup

Milk – ½ cup


Yield: 8 to 10 muffins approx


Method:

  1. Combine all the wet ingredients and mix well using whisk until honey combines in.
  2. Combine all dry ingredients in another bowl and add onto wet ingredients bowl, combine well without lumps.
  3. Grease muffin trays with oil or line them with muffin liners.
  4. Pour batter onto muffin tray filling each space till halfway.
  5. Preheat oven at 200⁰C for 5 minutes.
  6. Bake muffins at 200⁰C for 15 minutes (or until a toothpick inserted comes out clean).
