Kovakai (Tindora) Rice


Ingredients:

Rice – 1 ½ cups

Water – 3 cups

Kovakai (Tindora) - 300 gms

Roasted peanuts – a handful

Roast & grind to powder:

Channa dal – 2 teaspoons

Coriander seeds – 2 teaspoons

Sesame seeds – 2 teaspoons

Curry leaves – 10

Red chillies – 2

Cumin seeds – ½ teaspoon

Pepper – ¼ teaspoon

 

Method:

  1. Roast the ingredients mentioned & grind with peanuts.
  2. Cook rice in an electric rice cooker with water & a drop of sesame oil.
  3. Allow cooked rice to cool.
  4. Heat oil in a non stick kadai.
  5. Add mustard seeds, cumin seeds & allow spluttering.
  6. Add the chopped tindora (kovakai), sprinkle a handful of water, and keep closed stirring occasionally until cooked.
  7. Add the ground powder & rice to the cooked tindora & mix well.
  8. Serve hot with papad/raitha.
