Lemon Rice



Ingredients:

Rice – 1 cup

Lemon – 1

Turmeric powder – ¼ teaspoon

Salt – 1 ¼ teaspoon

Tempering:

Sesame oil – 2 teaspoons

Mustard seeds – ½ teaspoon

Red chillies – 2 or 3

Curry leaves – 10 leaves

Roasted peanuts – a handful

Channa dal – 1teaspoon

Urad dal – 1 teaspoon

Hing – ¼ teaspoon

 

Method:

  1. Cook rice with 2 cups of water in an electric rice cooker with a drop of sesame oil. (This helps the rice to cook as separate grains)
  2. Heat oil and add mustard seeds and allow spluttering.
  3. Add channa dal and urad dal and fry till dals turn golden brown.
  4. Add the rest of the ingredients mentioned under tempering; remove from flame after a quick stir.
  5. Add tempering to cooked rice along with lemon juice and mix well.
