Thattai


Ingredients:

Rice flour – 1 cup

Urad dal flour – 1/8 cup

Butter – ¼ cup

Salt – 1 teaspoon

Hing – ¼ teaspoon

Chilli powder – ¾ teaspoon

Roasted channa dal (Pottu kadalai) – 1 teaspoon

Water – between ½ & ¾ cup

Oil – for deep frying


Method:

  1. Heat oil in a deep pan for frying.
  2. Mix together all ingredients except water and oil.
  3. Add a teaspoon of hot oil to the mixture, mix well.
  4. Add sufficient water to make dough.
  5. Apply oil to both hands and press between palms & drop thatai in hot oil.

Tips:

  • While taking out thattai's from oil wait till the oil sounds go very feeble, this would ensure the thattai cooked well till its inside.
  • Adding more butter would make the thattai loose its shape & disperse in hot oil.
