Chettinad Potatoes

Makes: 2 to 3 serves

Ingredients:

Potatoes – 3 to 4 big ones

Small onions – 1 cup

Onion – 1 small (finely chopped)

Salt – 1¼ teaspoons

Turmeric powder – ¼ teaspoon

Roast & grind to powder:

Channa dal – 2 teaspoons

Urad dal - 3 teaspoons

Sesame seeds – 2 teaspoons

Red chillies – 2 or 3

Pepper – 1 teaspoon

Curry leaves – 20

Tempering:

Sesame Oil – 1 + 1 tablespoons

Mustard seeds - 1 teaspoon

Cumin seeds – ½ teaspoon

Method:

  1. Peel the potatoes & dice into mid sized pieces, keep aside.
  2. Heat 1 tablespoon of oil in a non-stick deep pan.
  3. Add mustard seeds & cumin seeds, allow spluttering.
  4. Add the small onions, big onions, salt, turmeric powder & saute till onions are slightly browned.
  5. Add the potato pieces, combine well.
  6. Sprinkle approx. ½ cup of water & cook keeping closed checking in intervals. (Might take 8 to 10 minutes for the potatoes to cook.)
  7. Add the freshly ground powder & another tablespoon of oil mix well, fry on medium heat for 2 to 3 minutes.
  8. Serve hot with rice/roti.
