Pudina Paneer (Mint Paneer)


Ingredients:

Paneer cubes – 1 ½ cups

Onions – 2 (finely chopped)

Tomatoes – 2 (finely chopped)

Mint leaves – ½ bunch (finely chopped)

Coriander leaves – 2 teaspoons (finely chopped)

Oil – 2 teaspoons

Salt – 1 ¾ teaspoons

Curd – 1 tablespoon

Powders:

Chilli powder – ½ teaspoon

Corrinader powder – 1 ½ teaspoon

Turmeric powder – ¼ teaspoon

Seasoning:

Bay leaf – 1

Cinnamon – 1

Cloves – 1

Grind together:

Garlic – 2 small cloves (or) 1 big clove

Ginger – 1 inch piece

Pepper - 1 teaspoon

Cumin seeds – ½ teaspoon


Method:

  1. Heat oil in a non stick kadai.
  2. Add ingredients mentioned under seasoning & the ground mixture.
  3. Fry for a minute.
  4. Add finely chopped onions & powders mentioned, sauté for 2 to 3 minutes.
  5. Add finely chopped tomatoes, salt & sauté till tomatoes melt. (raw smell must have vanished)
  6. Add paneer cubes, finely chopped mint leaves & curd.
  7. Sauté for just 2 minutes.
  8. Garnish with coriander leaves & serve with rotis.
