Aloo Parathas (potato parathas)


Ingredients:

Potatoes – 5

Onion – 1 (finely chopped)

Coriander leaves – 3 teaspoons (finely chopped)

Turmeric powder – ¼ teaspoon

Cumin seeds – ½ teaspoon

Oil – 1 teaspoon (for seasoning)

Salt – 2 teaspoons

Oil – 10 teaspoons

Atta – 2 cups

Powders:

Chilli powder – 1 teaspoon

Coriander powder – 2 teaspoons

Garam masala powder – ½ teaspoon

Yeild – 10 parathas

Method:

1. Cut potatoes into halves & cook potatoes for 2 to 3 whistles in a pressure cooker.

2. Once cool, peel skin & mash nicely; keep aside.

3. Make dough of atta with ½ teaspoon of salt & let it rest for 10 minutes.

4. Make small balls of dough.

5. Heat oil for seasoning & add cumin seeds.

6. Add chopped onions & add all powders mentioned & 1 ½ teaspoon of salt.

7. Add mashed potatoes & mix well.

8. Allow this mixture to cool & then make potato balls.

10. Cook both sides on dosa tawa using 1 teaspoon of oil for each paratha.

11. Serve hot with pickle/butter/raitha.
