Kotthu paratha


Ingredients:


Frozen parathas – 10

Onions – 2

Tomatoes – 2

Capsicum – ½

Oil – 3 teaspoons

Ginger garlic paste – 1 teaspoon

(can be avoided if disliked)

Coriander powder – 1 teaspoon

Chilli powder – 1 teaspoon

Garam masala powder – 1 teaspoon

Eggs – 3 (can be avoided if disliked)

Cumin seeds – 1 teaspoon

Coriander leaves – to garnish

Method:

  1. Cook the frozen parathas both sides.
  2. Randomly tear them into smaller pieces.
  3. Heat oil in a kadai, add cumin seeds & allow to splutter.
  4. Add finely chopped onions and all powders mentioned & sauté for 2 mins.
  5. Add tomatoes & salt, sauté for 2 mins till tomato pieces melt.
  6. Add capsicum & sauté for 2 more mins.
  7. Add eggs to the kadai and keep stirring till the eggs are cooked.
  8. Add the paratha pieces & keep stirring till all ingredients mix well.
  9. Garnish with coriander leaves.
  10. Serve with raitha.

Note:

This recipe can be made with left over chapathis as well.
