Potato Curry


Ingredients:

Potato – ½ kg (cut into halves)

Salt – 1 ½ teaspoon

Chilli powder – 1 teaspoon

Oil – 5 to 6 teaspoons

Special masala powder – 2 teaspoons

Curry leaves – 10

Turmeric powder – ½ teaspoon

Hing – ¼ teaspoon

Cumin seeds – ½ teaspoon

Besan – 2 teaspoons

Method:

  1. Cook the potato piece with hing & turmeric powder for 2 whistles in a pressure cooker. (Adding hing here takes the gas (vaayu) out of potato)
  2. Once cooled peel skin & cut into halves.
  3. Heat 3 teaspoons of oil in a kadai.
  4. Add mustard seeds, cumin seeds & allow spluttering.
  5. Add curry leaves, potato pieces, salt and chilli powder.
  6. Mix well & leave for 5 minutes.
  7. Add besan & special masala powder.
  8. Keep in sim till pieces look golden brown & crisp.
  9. Serve hot with rice & sambar/rasam.
