Avial



Ingredients:

Carrot – 1

Potato – 1

Yam - 100 gms

Raw banana – ½

White pumpkin – a slice

Beans - 5

Drumstick – 1

Coconut oil – 2 teaspoons

Optional:

Yoghurt– 1 tablespoon 

To grind:

Coconut – 1 cup (grated)

Raw rice – 1 teaspoon (soaked in water for an hour)

Cumin seeds – 1 teaspoon

Green chillies – 2

Method:

  1. Cut all vegetables to one inch long pieces.
  2. Boil vegetables with a tumbler of water.
  3. Grind the ingredients mentioned to a smooth paste.
  4. Add the ground paste once vegetables are cooked.
  5. Allow boiling for 5 minutes.
  6. Add curd (avoid if disliked), mix well.
  7. Cook for a minute.
  8. Add curry leaves, coconut oil and mix well & remove from flame.

Suggestions:

Can be served with Adai/ any mixed rice such as Lemon rice, Tamarind rice, Coconut rice.
