Corn Salad

Ingredients:
Boiled corn kernals – 1 cup
Onion, tomato, carrot, capsicum –1 cup
(all combined together - finely chopped  
I used ½ onion, ½ tomato, ½ of a small carrot ¼ of a capsicum)
Lemon juice – from ½ a lemon 
Salt – ½ teaspoon (flat)
Chilli powder – ¼ to ½ teaspoon (depending on spice levels)
Chat masala powder - ¼ teaspoon
Coriander leaves – 2 teaspoons (finely chopped)

Makes: 2 to 4 serves

Method:

  1. Chop all the veges finely.
  2. In a bowl add boiled corn and all the finely chopped veges along with salt, lemon juice, chilli powder and chat masala powder.
  3. Combine well using tongs or spatula.
  4. Garnish with chopped coriander leaves and serve.
