Mixed Veg Curry



Ingredients:

Carrot – 2

Cabbage – 1 ½ cups

Frozen Green peas – a handful

Salt – 1 ½ teaspoon

Oil – 1 teaspoon

Mustard seeds – ½ teaspoon

Turmeric powder – ¼ teaspoon

Group 1 to grind:

Green chilly – 1

Small onions – 10

Group 2 to grind:

Coconut – 3 teaspoons (grated)

Curry leaves – 10


Method:

  1. Finely chop cabbage & carrot.
  2. Heat oil in a non stick kadai.
  3. Add mustard seeds, cumin seeds & allow spluttering.
  4. Add group 1, turmeric powder & fry for 2 to 3 minutes.
  5. Add finely chopped cabbage, carrot, green peas & salt.
  6. Keep closed for 3 to 5 minutes stirring on and off.
  7. Add group 2, mix well & switch off flame.
  8. Garnish with coriander leaves & serve with rice, sambar/rasam.

* Add this to a bowl of cooked rice, add a teaspoon of ghee mix well & serve as mixed veg rice.
