Potato Rice


Ingredients:

Potatoes – 3 medium sized

Salt – 1 teaspoon

Raw Rice/ Basmati rice – 1 cup

Curry leaves – 10 leaves

Oil – 1 teaspoon

Cumin seeds – ½ teaspoon

Powders:

Chilli powder – ¾ teaspoon

Coriander powder – 1 teaspoon

Garam masala powder – ¼ teaspoon

Method:

  1. Cook the rice with 2 cups of water & keep aside.
  2. Grate the potatoes/ fine chop to smallest cubes possible.
  3. Heat oil in a non-stick kadai, add cumin seeds and curry leaves.
  4. Add grated/chopped potatoes.
  5. Add powders mentioned, salt and mix well.
  6. Care should be taken always while mixing/frying not to mash the potatoes.
  7. Once potatoes cooked keep aside & allow cooling.
  8. Once the potato mixture is cool, add cooked rice to it & mix well.
  9. (Optional) add a teaspoon of melted ghee while mixing for aroma & rich taste.
  10. Serve with raitha/fried papad.
