Spinach-Oats Roti


Ingredients:

Spinach leaves – 1 cup

Oats – ½ cup

Wheat flour – 1 ½ cups

Oil – 1 teaspoon

Group 1:

Salt – 1 ½ teaspoons

Chilli powder – ¾ teaspoon

Garam masala powder – ½ teaspoon

Cumin seeds – ½ teaspoon

Ajwain (omam) – ½ teaspoon

Black sesame seeds – ¾ teaspoon

Yield: 8 Rotis

 

Method:

  1. Heat oil in a pan, add cumin seeds and washed spinach leaves.
  2. Sauté for 2 to 3 minutes and allow cooling.
  3. Grind to paste once cooled.
  4. Grind oats to fine powder and add to wheat flour along with group 1 ingredients, mix well and kneed to soft dough with little water.
  5. Let this rest for 15 – 30 mins.
  6. Roll to rotis and toast in tawa with ½ a teaspoon of oil(butter if you could afford to indulge) for each roti.
  7. Serve hot with pickle and thick curd.
