Ellu Kuzhambu

(Sesame seeds Kuzambu)

Makes: 4 to 6 servings

Ingredients:

Ellu (sesame seeds) - 1 tablespoon

Curry leaves - 10

Small onions – 1 cup

Turmeric powder - ¼ teaspoon

Tamarind – lemon sized ball

Salt – 1 teaspoon

Tempering:

Sesame oil – 3 tablespoon

Mustard seeds – 1 teaspoon

Fenugreek seeds – ¼ teaspoon

Roast & Grind:

Sesame oil - 1 teaspoon

Urad dal - 1 teaspoon

Channa dal – 2 teaspoons

Cumin seeds – 1 teaspoon

Red chillies - 2

Curry leaves - 10

Method:

  1. Prepare tamarind extract soaking lemon sized tamarind in 2 glasses of water approx.
  2. In a flat pan roast the ingredients mentioned under roast & grind to golden brown in a teaspoon of sesame oil
  3. In the same pan dry roast sesame seeds until they splutter.
  4. Allow the roasted ingredients to cool down and grind to fine powder.
  5. Heat sesame oil in a deep pan, add mustard seed & fenugreek seeds, fry till mustard splutters & fenugreek seeds turn golden brown.
  6. Add small onions, curry leaves & fry till golden brown (approx a min or 2).
  7. Add tamarind extract along with turmeric powder & salt, allow boiling for until raw smell vanishes (for approx. 5 to 7 mins)
  8. Add the ground powder & allow boiling for a further minute or 2.
  9. Serve hot with rice & ghee.
