Javvarisi payasam

Makes : 4 serves

Ingredients:

Javvarisi (sago aka sabudana) – ¾ cup

Raw sugar (or) white sugar – ¾ cup

Milk – 2 ½ cups

Water – 1 cup

Ghee – 1 ½ teaspoon

Kesar colour - a pinch

Cashews – 5

Cardamom powder – ¼ teaspoon

Method:

  1. Heat 1 teaspoon of ghee in a non-stick kadai & add sago.
  2. Fry for 2 to 3 minutes.
  3. Transfer contents to a pressure cooker.
  4. Add kesar colour, water & 1 cup of milk.
  5. Allow 2 to 3 whistles.
  6. Heat ½ teaspoon of ghee in a non-stick kadai.
  7. Break cashews into small pieces & fry til golden brown.
  8. Add boiled sago, sugar & the remaining milk.
  9. Allow boiling till payasam thickens.
  10. Add cardamom powder & mix well.
  11. Serve hot.
