Kovakai (Tindora) Rice

Rice – 1 ½ cups
Water – 3 cups
Kovakai (Tindora) - 300 gms
Roasted peanuts – a handful
Roast & grind to powder:
Channa dal – 2 teaspoons
Coriander seeds – 2 teaspoons
Sesame seeds – 2 teaspoons
Curry leaves – 10
Red chillies – 2
Cumin seeds – ½ teaspoon
Pepper – ¼ teaspoon

- Roast the ingredients mentioned & grind with peanuts.
- Cook rice in an electric rice cooker with water & a drop of sesame oil.
- Allow cooked rice to cool.
- Heat oil in a non stick kadai.
- Add mustard seeds, cumin seeds & allow spluttering.
- Add the chopped tindora (kovakai), sprinkle a handful of water, and keep closed stirring occasionally until cooked.
- Add the ground powder & rice to the cooked tindora & mix well.
- Serve hot with papad/raitha.
