Sprouts Subzi

Makes : 4 serves

Ingredients:

Moong sprouts – 1 bowl

Onion – 1 (big)

Tomatoes – 2 (medium)

Oil- 2 teaspoons

Salt – 1 ½ teaspoons

Corriander leaves - 2 teapsoons (finely chopped)

Grind coarsely:

Ginger – 1 inch piece

Garlic – 2 cloves

Chilli powder – 1 teaspoon

Coriander powder – 2 teapsoons

Garam masala powder – ½ teaspoon

Coriander stem – a handful (optional)

Cumin seeds – ½ teaspoon

Method:

  1. Heat oil in a non stick kadai, add the coarsely ground paste.
  2. Sauté for 2 minutes & then add the chopped onions.
  3. Saute for 3 minutes & then add chopped tomatoes, salt.
  4. Sauté until oil separates.
  5. Add the moong sprouts & keep closed for 3 minutes.
  6. Garnish with coriander leaves & serve hot with rotis.
