Vegetable Aval Upma (Poha)

Ingredients:

Aval (poha) – 2 ½ cups

Onion – 1

Carrot – 1 (small)

Beans – 5 or 6

Green Peas – a handful

Salt – 2 ½ teaspoons

Coriander powder – 1 ½ teaspoons

Green chillies – 2

Oil – 1 teaspoon

Mustard seeds – ½ teaspoon

Cumin seeds – ½ teaspoon

Coconut – 2 teaspoons (grated)

Coriander leaves – 2 teaspoons (finely chopped)

Method:

  1. Rinse the aval with water once, drain & keep aside.
  2. Finely chop all vegetables.
  3. Heat oil in a non-stick kadai.
  4. Add mustard seeds, cumin seeds and allow spluttering.
  5. Add green chillies, finely chopped onions & sauté for 2 minutes.
  6. Add finely chopped carrot, beans, green peas, 1 teaspoon of salt & coriander powder.
  7. Sauté well & sprinkle a handful of water, keep closed for 2 to 3 minutes. (Or until vegetables are cooked)
  8. Add the aval & remaining 1 ½ teaspoons of salt.
  9. Sauté for 2 to 3 minutes.
  10. Add grated coconut & sauté for one more minute.
  11. Garnish with coriander leaves & serve hot with pickles.
