Instant Dosa (karacha dosai)

Makes: 12 -15 dosas approx

Ingredients:

Rice flour – 1 cup

Wheat flour (atta) – ½ cup

Gram flour (Besan) – ¼ cup

Semolina (Rava) – ¼ cup

Curry leaves – 10

Corriander leaves - 2 teaspoons (finely chopped)

Salt – 1½ teaspoons

Cumin seeds – 1 teaspoon

Pepper powder – ½ teaspoon

Hing - ¼ teaspoon

Water - 3½ to 4 cups

Method:

  1. Add all ingredients to a big bowl one by one.
  2. Add water & mix using whisk to a smooth paste ensuring no lumps.
  3. Add water from time to time, whisk in until pourable consistency.
  4. Pour dosa onto a really hot flat pan & cook both sides to golden brown with 1 or 2 teaspoons of oil.
  5. Serve hot & crisp with coconut chutney/onion & tomato chutney.
