Seppankizangu Roast

Seppankizangu – ½ kg
Chilli powder – 1 teaspoon
Hing - ¼ teaspoon
Curry leaves – 10
Salt – 1 ½ teaspoon
Oil – 1 tablespoon
Mustard seeds – 1 teaspoon
Cumin seeds – ½ teaspoon
Turmeric powder – ½ teaspoon
Special masala powder – 2 teaspoons
Coconut oil - 1 teaspoon

- Wash seppankizangu thouroughly.
- Boil it in a kadai till jus cooked.
- Peel off the skin & slice into thin pieces (thickness as desired).
- Heat oil in a pan.
- Add mustard seeds & allow spluttering.
- Add cumin seeds, hing & curry leaves.
- Add sliced seepankizangu, chilli powder, salt & turmeric powder.
- Fry in low flame until all pieces turn golden brown in colour.
- Add the special masala powder fry for 2 more minutes.
- Add coconut oil & mix well. (imparts a good flavour)
- Can be served with rice & sambar/rasam.
