Coconut Rice
Makes: 2 to 3 serves

Coconut – 1 cup (grated)
Rice – 1 ½ cups
Coconut oil – ½ teaspoon
Green chillies – 2
Roasted groundnuts – a handful
Roasted Cashews – 5 or 6
Curry leaves – 10
Red chilli - 1
Oil – 1 teapsoon
Mustard seeds – ½ teaspoon
Cumin seeds – ¼ teaspoon

Method:
- Heat oil in a kadai.
- Add mustard seeds & cumin seeds, allow spluttering.
- Add curry leaves, green chillies & red chilli. (break chillies into halves)
- Add the grated coconut & fry for a minute.
- Cook the rice with 3 cups of water also adding a drop of gingerly oil (nalla ennai), this helps the rice to cook without the grains sticking to each other.
- Allow the cooked rice to cool completely.
- Add the rice, cooked mixture, ground nuts & cashews together & mix well.
- Serve with avial.
