Coconut Rice

Makes: 2 to 3 serves

Ingredients:

Coconut – 1 cup (grated)

Rice – 1 ½ cups

Coconut oil – ½ teaspoon

Green chillies – 2

Roasted groundnuts – a handful

Roasted Cashews – 5 or 6

Curry leaves – 10

Red chilli - 1

Oil – 1 teapsoon

Mustard seeds – ½ teaspoon

Cumin seeds – ¼ teaspoon

Method:

  1. Heat oil in a kadai.
  2. Add mustard seeds & cumin seeds, allow spluttering.
  3. Add curry leaves, green chillies & red chilli. (break chillies into halves)
  4. Add the grated coconut & fry for a minute.
  5. Cook the rice with 3 cups of water also adding a drop of gingerly oil (nalla ennai), this helps the rice to cook without the grains sticking to each other.
  6. Allow the cooked rice to cool completely.
  7. Add the rice, cooked mixture, ground nuts & cashews together & mix well.
  8. Serve with avial.
