Palak Paneer

Makes : 4 serves

Ingredients:

Palak – 1 bunch

Paneer cubes – 2 cups

Onion – 1 big sized

Tomatoes – 2 mid sized

Salt – 2 teaspoons

Coriander powder – 2 teaspoons

Garam masala powder – 1 teaspoon

Turmeric powder – ¼ teaspoon

Oil – 1 teaspoon

Cumin seeds – ½ teaspoon

To grind coarsely:

Ginger – 1 inch piece

Garlic – 1 clove

Green chillies – 3 or 4

Method:

  1. Wash palak thoroughly.
  2. Cook for 2 or 3 minutes (with the stem part) in low flame on a non-stick kadai & allow cooling.
  3. Heat oil in a non stick kadai.
  4. Add cumin seeds & the coarsely ground mixture, fry for a minute.
  5. Add chopped onions, coriander powder, garam masala powder, turmeric powder & sauté for 3 minutes.
  6. Add chopped tomatoes, salt & sauté till the tomatoes melt & blend.
  7. Allow the cooked mix to cool.
  8. Grind the cooked palak & the cooked mix together to smooth paste.
  9. Allow the paneer cubes to boil in the ground mixture for 3 to 5 minutes in low flame.
  10. Serve hot with rotis.
