Sambar Rice

(Made with Leftover sambar and rasam)

Makes: 2 to 3 serves

Ingredients:

Left over onion sambar – 1 cup

Left over tomato rasam – 1 ½ cups

Mixed veges of your choice – ¾ cup

Rice – ¾ cup

Moong dal – ¼ cup

Hing – 1 pinch

Salt – ½ to 1 teaspoon (depending on salt content is your sambar and rasam)

Special masala powder – 2 teaspoons

Ghee – 1 teaspoon

Method:

  1. Wash & finely chop the veges and boil them with water until just cooked. (I used a few hand sprinkles of water and cooked them in a microwave).
  2. Pressure cook the moong dal and rice together with 2 ½ cups of water for 2 to 3 whistles.
  3. Once pressure releases, add to the cooker leftover onion sambar, rasam, cooked veges, hing, salt, special masala powder and allow 3 to 4 minutes on the stove stirring a few times in between.
  4. Add ghee and serve hot with raitha and potato chips/appalam.
