Instant Garlic Rasam

Makes: 2 to 4 servings

Ingredients:

Coriander leaves – 2 teaspoons (chopped)

Water - 2 cups

Grind to paste:

Tomatoes – 2

Curry leaves – 10

Cumin seeds – 1 teaspoon

Pepper – ½ teaspoon

Red chilli – 1

Salt – 1½ teaspoon

Turmeric powder - ¼ teaspoon

Tempering:

Ghee – 1 teaspoon

Mustard seeds – 1 teaspoon

Garlic – 2 cloves (finely chopped)

Method:

  1. Dilute the ground ingredients with 2 cups of water.
  2. Allow this to boil for 7 to 10 minutes.
  3. Heat ghee, add mustard seeds & allow spluttering.
  4. Add finely chopped garlic & fry till golden brown.
  5. Add this tempering & chopped corriander leaves to the rasam & keep closed.
  6. Serve hot with rice & ghee.
