Soya kurma

Makes : 4 serves

Ingredients:

Soya chunks – 1 cup

Oil – 1 teaspoon

Green peas – a handful (Optional)

Yoghurt – 1 scoop

Salt – 2½ teaspoons

Seasoning:

Cinnamon – 2 pieces

Cloves – 5 pieces

Bay leaves – 3 pieces

Cardamom – 2 pieces

Grind to paste - 1:

Green chillies – 3

Garlic – 3 cloves

Ginger – 1 inch piece

Grind to Paste 2:

Onions – 2

Tomatoes - 2

Powders:

Coriander powder – 2 teaspoons

Garam masala powder – 1 teaspoon

Turmeric powder – ¼ teaspoon

Method:

  1. Heat oil in a kadai, add all mentioned under seasoning.
  2. Add the ground paste 1 & sauté for 3 minutes.
  3. Add ground paste 2, powders mentioned & salt, sauté till raw smell vanishes.
  4. Add yoghurt and fry for 2 to 3 minutes. (Cooked Green Peas could be added after this if using)
  5. Keep soya chunks immersed in hot water for 10-15 minutes.
  6. Squeeze out excess water & add the chunks.
  7. Sauté for 2 minutes.
  8. Garnish with coriander leaves & serve hot.
