Dum Aloo

Makes : 4 serves

Ingredients:

Aloo (potatoes) – ½ kg (preferably baby potatoes)

Onion – 1

Tomatoes – 2

Oil – 3 tablespoons

Curd – 1 tablespoon

Salt – 1 ½ teaspoons

Grind to paste:

Onion - 1

Garlic – 1 pod

Ginger – ½ inch piece

Coriander seeds – 1 teaspoon

Cumin seeds – 1 teaspoon

Pepper – ½ teaspoon

Poppy seeds – 1 teaspoon

Red chillies – 3

Seasoning:

Bay leaves – 1 leaf

Cloves – 5 pieces

Cinnamon – 2 pieces

Cardamom – 1

Method:

  1. Peel skin of potatoes.
  2. Prick with fork & soak in water with a little salt for an hour.
  3. Take potatoes out of water & pat them dry.
  4. Heat oil, add potatoes & fry till golden brown.
  5. In the remaining oil, add ingredients mentioned under seasoning.
  6. Add the finely chopped onions & fry for 2 minutes.
  7. Add the ground paste, salt, turmeric powder & fry for 3 more minutes.
  8. Grind tomatoes to a smooth paste.
  9. Add the ground tomato paste, curd & fry till raw smell vanishes.
  10. Add the fried potatoes & allow boiling for a few more minutes.
  11. Garnish with coriander leaves & serve hot with rotis.
