Dum Aloo

Aloo (potatoes) – ½ kg (preferably baby potatoes)
Onion – 1
Tomatoes – 2
Oil – 3 tablespoons
Curd – 1 tablespoon
Salt – 1 ½ teaspoons
Grind to paste:

Garlic – 1 pod
Ginger – ½ inch piece
Coriander seeds – 1 teaspoon
Cumin seeds – 1 teaspoon
Pepper – ½ teaspoon
Poppy seeds – 1 teaspoon
Red chillies – 3
Seasoning:
Bay leaves – 1 leaf
Cloves – 5 pieces
Cinnamon – 2 pieces
Cardamom – 1
Method:
Method:
- Peel skin of potatoes.
- Prick with fork & soak in water with a little salt for an hour.
- Take potatoes out of water & pat them dry.
- Heat oil, add potatoes & fry till golden brown.
- In the remaining oil, add ingredients mentioned under seasoning.
- Add the finely chopped onions & fry for 2 minutes.
- Add the ground paste, salt, turmeric powder & fry for 3 more minutes.
- Grind tomatoes to a smooth paste.
- Add the ground tomato paste, curd & fry till raw smell vanishes.
- Add the fried potatoes & allow boiling for a few more minutes.
- Garnish with coriander leaves & serve hot with rotis.
