Pacha Milagai Thokku
Makes: 200 grams approx
Ingredients:
Green Chillies - 200 grams
Sesame Oil - ½ cup + 1 teaspoon
Urad dal - 2 tablespoon
Tamarind - 1 small ball (Goli size)
Jaggery - 1 tablespoon
Mustard seeds - 1 teaspoon
Hing - 1 pinch
Salt - 1 teaspoon
Method:
Heat one teaspoon of sesame oil in a kadai and add the urad dal to it, fry till golden brown in slow heat. (Make sure not to brown the contents)
Remove the golden roasted urad dal and keep aside to cool down.
Remove the stem part of green chillies and add them to the remaining oil in the pan and sauté for 3-5 minutes. (The skin starts to change colour).
Remove and keep aside to cool down.
Grind the chillies along with salt, hing. tamarind to a semi coarse paste.
Now add the roasted dal, jaggery and grind to a coarse mixture. (add only very little water in sprinkles to grind)
Heat ½ cup of sesame oil in a pan, add mustard seeds and allow to splutter.
Add the coarse paste and keep frying for about 3 -5 minutes in low heat. (You'll notice that the oil separates)
Remove from heat and allow to cool completely before storing.
Store in a dry, airtight container and refrigerate.
This thokku stays good for upto a month if refrigerated.
