Spicy Indian Style Pasta

Ingredients:

Pasta – 1½ cups (any kind of pasta)

Onions – 1

Tomatoes – 2

Carrot – 1

Potato – 1

Beans – 5

Green peas – a handful

Oil – 2 teaspoons

Salt – 2 teaspoons

Coriander powder – 2 teaspoons

Garam masala powder – ½ teaspoon

Turmeric powder – ¼ teaspoon

Coriander leaves – 2 teaspoons (finely chopped)

Grind coarsely:

Green chillies – 5

Coriander stem – a handful (optional)

Curry leaves – 10 leaves

Garlic – 1 clove

Ginger – ½ inch piece

Method:

  1. Cook the pasta as per instructions on its pack. (With 1 teaspoon salt)
  2. Heat oil in a non-stick pan.
  3. Add the ground paste & sauté for a minute.
  4. Add chopped onions corrinader powder, turmeric powder, garam masala powder & sauté for 2 minutes.
  5. Add chopped tomatoes & salt (remaining 1 teaspoon), sauté till tomatoes melt.
  6. Add finely chopped vegetables mentioned, sprinkle a handful of water & keep closed until veges cooked.
  7. Add the cooked pasta & mix well.
  8. Garnish with coriander leaves & serve hot.
