Spinach Biriyani

Makes : 4 serves

Ingredients:

Spinach – 1 cup (finely chopped)

Onions – 2 (mid sized)

Tomatoes – 3 (mid sized)

Coriander leaves – 1 teaspoon (finely chopped)

Salt – 2 ½ teaspoons

Basmati rice – 2 cups

Water – 1½ cups

Powders:

Chilli powder – 1 teaspoon

Coriander powder – 2 teaspoons

Garam masala powder – ½ teaspoon

Turmeric powder – ¼ teaspoon

Grind coarsely:

Ginger – 1 inch piece

Garlic – 1 clove

Tempering:

Oil – 2 to 3 teaspoon

Bay leaf – 1

Cinnamon stick – 2

Cloves -4

Fennel seeds – ½ teaspoon

Cumin seeds – ½ teaspoon

Method:

  1. Heat oil in a non stick deep pan.
  2. Add ingredients mentioned under seasoning and fry till golden brown.
  3. Add the coarsely ground paste and sauté for a minute.
  4. Add fine chopped onions and all powders mentioned & sauté for 2 to 3 minutes.
  5. Add fine chopped tomatoes and salt, sauté until oil separates.
  6. Add fine chopped spinach leaves and sauté for a couple of minutes.
  7. Transfer the cooked mixture along with rice and water onto electric rice cooker and cook.
  8. Serve hot with raitha.
