Red Capsicum Pulao

Makes: 2 to 3 serves

Ingredients:

Red capsicum – 1 big

Frozen green peas – a handful

Oil – 2 teaspoons

Salt – 1 ½ teaspoons

Cooked Basmati rice – 1 ½ cups

Coriander leaves – 2 teaspoons (finely chopped)

Chilli powder – ¾ teaspoon

Garam masala powder – ¼ teaspoon

Seasoning:

Bay leaf – 1

Cinnamon – 1

Cloves – 2

Cardamom – 2

Saunf – ½ teaspoon

Method:

  1. Heat oil in a non-stick deep pan.
  2. Fine chop the capsicum and keep aside.
  3. Fry ingredients mentioned under seasoning until golden brown.
  4. Add the finely chopped red capsicum along with salt, chilli powder, garam masala powder and green peas & sauté for 5 to 7 minutes on a medium flame. (Capsicum should be crunchy)
  5. Allow cooked ingredients to cool and add to cooked basmati rice.
  6. Garnish with coriander leaves and serve with raitha.
