Capsicum Rice

Makes: 2 to 4 serves

Ingredients:

Capsicum – 1 cup (finely chopped)

Cooked rice – 2 cups

Special masala powder – 3 teaspoons

Roasted peanuts - ¼ cup

Salt – 1 teaspoon

Hing – ¼ teaspoon

Turmeric powder – ¼ teaspoon

Tempering:

Oil – 2 to 3 teaspoons

Mustard seeds – 1 teaspoon

Cumin seeds - ½ teaspoon

Fennel seeds - ¼ teaspoon

Curry leaves - 10

Method:

  1. Heat oil in a non-stick deep pan.
  2. Add mustard seeds, cumin seeds, fennel seeds & allow spluttering.
  3. Add curry leaves & finely chopped capsicum.
  4. Add salt, hing & turmeric powder, mix well.
  5. Sprinkle a handful of water & cook keeping closed for 2 minutes.
  6. Add special masala powder, rice, roasted peanuts & mix well.
  7. Serve with raitha.
